Oven Roasted Carrots

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, toss the carrots with olive oil, oregano (or thyme), cumin, garlic, salt, and pepper.

  3. Spread carrots in a single layer on a baking sheet lined with parchment paper.

  4. Roast for 25–30 minutes, flipping once halfway through, until tender and lightly browned at the edges.

  5. Squeeze fresh lemon juice over the carrots just after removing from the oven.

  6. Garnish with parsley, feta, or a spoonful of Greek yogurt if desired.
