One-Pot Lemon Asparagus Pasta with Shrimp
1.Sauté garlic and shrimp:
In a large pot or deep skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds. Add shrimp, season with salt and pepper, and cook until pink (2–3 minutes per side). Remove shrimp and set aside.
2.Cook pasta and asparagus:
In the same pot, add pasta, broth, and a pinch of salt. Bring to a boil, then lower to simmer. Cover and cook for 5–7 minutes, stirring occasionally.
3.Add asparagus:
When pasta is about halfway cooked, stir in asparagus. Continue simmering uncovered until pasta is al dente and most of the liquid is absorbed.
4.Add lemon and shrimp:
Stir in lemon zest, lemon juice, and cooked shrimp. Cook for 1–2 minutes to warm through.
5.Finish:
Stir in a tablespoon of butter if using, and adjust seasoning with more lemon, salt, or pepper if desired.
